I got this recipe from the Central Community Cookbook. It's so easy to make, freezes well, and can feed an army!
Ingredients:
1.5 lb lean ground beef
1 onion chopped
1 14 oz can diced tomatoes
1 10 oz can rotel
1 8 oz can tomato sauce
1 ¼ ounce taco seasoning mix
1 14 oz can beef broth
1 16 oz can kidney beans
1 15 oz whole kernel corn
1 16 oz can black beans
Directions:
In a dutch oven, brown meat and onions until meat is no longer pink. Lightly salt and pepper meat while cooking. Do not over salt! Drain off all the nasty fat! Add tomatoes, rotel, and tomato sauce (stir well). Add corn, beans (stir well). Add beef broth and seasoning (stir well). Simmer about 30 minutes, stirring occasionally.
I like to serve this with tostitos or fritos scoops! Sprinkle some cheese on top, or you can even mix a little velveeta in with it! If you like sour cream, go ahead and put some on top!
